Ingredients-
For cake
- 1 cup Flour (maida)
- ¼ tsp baking Soda
- ½ tsp baking powder
- ½ tsp ground cinnamon
- 1/3 cup Brown Sugar
- 2 eggs
- 4 tbsp milk
- ¼ cup butter melted
- 250 g de seeded fresh cherries
For crumble topping
- 1/3 cup flour
- ¼ tsp ground cinnamon
- ¼ cup brown sugar
- 25g butter diced
For Liquor Topping
- 250 g cherry
- 1 cup sugar
- Red wine/ Rum- feel free to experiment
Preheat the oven to 180°C . Sift flour, Cinnamon powder, baking soda, baking powder in a bowl. In other bowl mix eggs, milk and butter. Beat well and then combine with flour mixture properly. Pour it in greased cake tin. Top it with cherries, press them a bit in the batter.
For crumble topping mix all the ingredients, rub in the butter with your fingers to make a crumb-like mixture, then work the mixture until it comes together in pea-sized pieces. Scatter the topping over the cherries. Bake for 30-35 minutes or until the toothpick comes clean. Leave it in the tin to cool.
Boil all the liquor ingredients until thick on medium/ low flame. Pour on cake and allow it it to sit for sometime.
